A friend of mine has been making this Chicken Tortellini soup for some time now and I bought all the ingredients a while ago and I decided that today was the day to make it for my family.
All I can say is YUM-O!
This soup was super easy and very tasty. My kids all loved it. I used the refrigerated Buitoni Cheese Tortellini (sooo tasty) but I did add just a little bit extra chicken soup base & some salt and pepper.
Your taste buds will let you know when to stop adding to the pot.
Try it for your family, you'll like it. Gees,

Chicken Tortellini Soup
9 oz bag frozen broccoli
1- 10 3/4 oz can cream of chicken soup
2 cups cubed chicken breast (about 3-4 breasts)
9 oz bag frozen sliced carrots
12 oz package cheese tortellini - fresh, frozen or dry
9 cups chicken broth
1 cup chopped onion
2 cloves minced garlic
1/2 tsp dried basil
1/2 tsp dried oregano
In a large pot combine: cream of chicken soup, chicken, carrots, chicken broth, onion, basil, oregano. Bring to boil and simmer for 15 minutes. Bring to boil and add tortellini and simmer for 10 minutes. Add broccoli and simmer an additional 10-15 minutes or until broccoli is tender and chicken is cooked through.
Serve garnished with grated parmesan cheese.
makes 10 1 1/2 cup servings.
Now to figure out what's for dinner tomorrow night? :)

ReplyDeleteOk first ingredient, broccoli. Cough cough. :) I'll skip that ingredient. Mr. Bush and i are tight! lol I love it when we find good recipes. Fun to try something new instead of having the same old same old. Thanks for sharing. It does look yummy minus the trees.
